Turkey Tenderloin with Gravy

What you need:

  • 2 lbs turkey breast tenderloins
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp pure maple syrup
  • 1 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 tsp dried sage (optiona)
  • 1/2 tsp sweet paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1 tbsp olive oil
  • [Gravy]
  • 3 tbsp butter
  • 3 tbsp flour
  • 1/4 cup onion, minced (optional)
  • 1 garlic clove, minced
  • 1.5 cups chicken broth (or turkey broth, the better flavor, the better the gravy)
  • Salt and pepper to taste (Optional: poultry seasoning to taste, parsley)

Step 1 Combine the olive oil, apple cider vinegar, maple syrup, soy sauce, garlic, thyme, rosemary, sage, paprika, salt, and pepper in a large bowl or ziploc bag.

Step 2 Add the turkey breast tenderloin and marinate for at least 4 hours, ideally overnight.

Step 3 Preheat the oven to 350 degrees.  Heat the oil and butter in cast iron skillet over medium high heat.

Step 4 Sear the turkey tenderloin on each side until golden brown, about 1-2 minutes per side.

Step 5 Place the skillet in the oven and cook for 15-20 minutes until it reaches 155 degrees in the thickest part. Remove from oven and tent with foil for 10 minutes. It should reach 165 degrees by the time it is served.

Step 6 While the turkey rests, make the gravy. In a medium size saucepan, melt the butter over medium heat. Add the onion and a pinch of kosher salt and pepper. Cook for 4-5 minutes until soft and tender. If using garlic, stir it in and cook for 1 minute until fragrant. Whisk in the flour until it is completely smooth without any lumps.  Slowly whisk in the chicken broth. Cook until thickened, it should take 4-5 minutes. Adjust thickness to your preference.  Taste and adjust seasoning as needed.
