What you need:

  • 2 lbs turkey breast tenderloins
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary (or thyme or sage)
  • 1/2 tsp dried thyme (or marjoram)
  • 1 tbsp butter
  • 1 tbsp olive oil

Step 1 Combine the olive oil, mustard, maple syrup, soy sauce, garlic, salt, pepper, rosemary, thyme in a non-reactive container. Marinate the turkey in this mixture for at least one hour, ideally overnight.

Step 2 Preheat the oven to 350 degrees. Heat the oil and butter in cast iron skillet over medium high heat.

Step 3 Sear the turkey tenderloin on each side until golden brown, about 1-2 minutes per side.

Step 4 Place the skillet in the oven and cook for 15-20 minutes until it reaches 155 degrees in the thickest part.

Step 5 Remove from oven and tent with foil for 10 minutes. Slice and serve. It should reach 165 degrees by the time it is served.
