What you need:

  • 1/4 cup onion, minced
  • 2 garlic cloves, minced
  • 1.33 lbs 99% lean ground turkey
  • 2 tbsp taco seasoning
  • 14 oz canned diced tomatoes, drained (Rotel for spicier, recommended)
  • 1 head butter lettuce (or Romaine)

Step 1 Heat a skillet over medium high heat. Add the onions and garlic. Cook for about 5 minutes until beginning to become tender. Add the ground turkey. Cook, breaking it up as it cooks, until no longer pink. Add taco seasoning and diced tomatoes. Bring to a simmer and cook for 3-5 minutes, as the sauce thickens. If needed you can add cornstarch, flour, or coconut flour to thicken up the sauce.

Step 2 Divide the turkey mixture among the lettuce leaves. Top with all your favorite toppings.
