List of Ingredients:

  • 1 tbsp olive oil
  • 1 pound 99% lean ground turkey
  • 2 bell peppers, diced
  • 1/2 red onion, diced
  • 1 oz. taco seasoning (or chili powder to taste)
  • 12 oz cauliflower rice
  • 1 cup salsa (of your choice)
  • 1/2 cup chicken broth (or water)

1 Heat a large skillet over medium high heat. Add olive oil. Once hot, add the bell peppers and onions. Cook for 4-5 minutes.

2 Add the turkey and taco seasoning. Cook until browned and cooked through.

3 Add the cauliflower rice, salsa, and chicken broth. Stir until well combined. Cook for 5 minutes, stirring occasionally, until the cauliflower is cooked to your liking.
