Tomato and Cucumber Salad with Corn Recipe
This delicious tomato and cucumber salad is made with fresh tomatoes, crunchy cucumbers, avocado, corn, and basil for the perfect side dish.
List of Ingredients:
- 1 lb. ripe tomatoes, chopped
- 1 English cucumber, chopped
- 2 ears corn, cut off the cob (optional: grill or roast it first)
- 1 avocado, chopped
- 1/4 cup basil, chopped (or more)
- 1 tbsp. olive oil
- 1 lemon, juice (or more)
- Salt and pepper
Gently toss everything the tomatoes, cucumbers, corn, avocado, and basil. If using traditional cucumbers, we recommend peeling them and gently scooping out the seeds with a spoon. If using canned or frozen corn, make sure it is fully defrosted and been patted dry.
Add the olive oil, lemon juice, salt, and pepper. Taste and add additional lemon juice, oil, salt, and pepper as needed.
