Heat the butter and olive oil in a cast iron skillet over medium high heat. Add the onions and poblano peppers. Cook for 4-5 minutes until beginning to soften.

Add the shrimp, garlic, and oregano. Cook for 2-3 minutes, stirring often, until the shrimp is cooked through and bright pink. Make sure not to overcook the shrimp.

Turn off the heat and season with salt and pepper to taste. Stir in cilantro. Remove the shrimp mixture from the pan and place in a bowl. Wipe the pan clean with a paper towel.

Heat the skillet over medium high heat. Add a couple of corn tortillas to the pan. Add about 1 tablespoon of cheese. Pile on some of the shrimp mixture and top with another tablespoon of cheese. Fold the taco over. Cook for 1-2 minutes per side until the tortilla gets crispy and the cheese melts. Repeat until all the tacos are cooked. Serve with salsa and lime juice.
