Baked Spinach Meatballs

What you need:

  • 1.5 lbs. 95% lean ground beef (or turkey)
  • 10 oz. frozen chopped spinach
  • 1/2 cup onion, minced
  • 3 garlic cloves, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup parmesan cheese
  • 1 egg
  • 2 tsp Italian seasoning
  • Salt and pepper

Step 1 Preheat the oven to 375 degrees. Defrost the spinach and squeeze out all the excess moisture using cheesecloth or a paper towel. Make sure to really squeeze out the moisture because too much moisture will cause the meatballs to crumble.

Step 2 Combine the ground beef, spinach, onion, garlic, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, pepper with your hands until just mixed.

Step 3 Roll out the meatballs, using a rounded tablespoon for each meatball, and place them on a prepared baking sheet.

Step 4 Bake for 18-20 minutes until cooked through.
