Heat the olive oil over medium high heat in a heavy skillet. Season the pork liberally with salt and pepper. Sear on both sides, about 3-4 minutes, until browned.

Add the pork to the slow cooker. Pour cranberry sauce on top. Cook on high for 2-3 hours or low for 4-5 hours until the pork is cooked through, around 160 degrees.

Remove the pork and let it rest for 5 minutes. While the pork rests, mix together the cornstarch with just enough cold water to make a slurry. Pour into the slow cooker and cook on high for 5 minutes until the sauce thickens.
