What you need:

  • 2 tbsp. olive oil
  • 2 red peppers, chopped
  • 2 green peppers, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 jalapeno, seeded and minced
  • 2 lbs. boneless skinless chicken breasts (or thighs)
  • 3 cups chicken broth
  • 28 oz. canned fire roasted diced tomatoes
  • 3 tbsp fajita seasoning (homemade below)
  • Salt and pepper
  • 1/4 cup fresh cilantro, chopped (for serving)
  • 1 lime (for serving)

Step 1 Heat the olive oil in a skillet. Add the bell pepper, onions, and jalapenos. Cook for 6-8 minutes until softened and lightly browned. Add the garlic and cook for one minute.

Step 2 Add the chicken to the bottom of the slow cooker. Sprinkle with fajita seasoning and salt and pepper if needed. Spread the sauteed bell peppers, onions, and jalapenos on top.

Step 3 Add the diced tomatoes with their juices and chicken broth. Stir to combine.

Step 4 Cook on low for 4 hours. Remove the chicken and shred with two forks.

Step 5 Add the chicken back to the soup. Taste and season with salt and pepper as needed. Serve with fresh cilantro and lime juice. Additionally, you can add shredded cheese, tortilla chips, sour cream, or avocado.
