Cut the beef into 2-3 large pieces and trim off any excess fat (if trying to keep it light). Sprinkle with salt and pepper. If you have time or have a crockpot with a "sear" function, ser the beef for 2-3 minutes per side until it has a nice crust and is browned on all sides.
