Shredded Chicken Tacos

What you need:

  • 1 lb boneless skinless chicken breasts (or thighs)
  • 1 cup diced tomatoes with green chilies
  • 1/2 cup chicken broth
  • 1 canned chipotle peppers in adobo, minced (adjust to taste)
  • 2 garlic cloves, minced
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/4 tsp oregano
  • 1/2 tsp kosher salt
  • 8 corn tortillas

Step 1 Add the chicken and all the sauce ingredients to a Dutch oven or large pot. Stir to combine. (Slow cooker and Instant Pot directions in notes)

Step 2 Bring to a simmer. Cover and cook on medium-low heat for 15-20 minutes until the chicken is cooked through and can be easily shredded. Shred chicken and return to sauce.

Step 3 Warm the corn tortillas. Fill with the shredded chicken and any other toppings you like. Topping ideas include cilantro, sour cream, limes, diced red onions, avocado, queso fresco, or shredded cheese.
