Salmon Kale Salad with Sweet Potatoes Recipe

This hearty main course salad is packed with broiled salmon, kale, sweet potatoes, avocado, and apples all tossed in a delicious maple Dijon vinaigrette.

List of Ingredients:

  • 1 lb. coho salmon (or any boneless skinless salmon)
  • 1 lemon
  • Salt and pepper
  • 6 cups kale
  • 1 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. honey (maple syrup or leave out)
  • 1 tbsp. whole grain mustard
  • 1 apple, chopped
  • 1 tomato, chopped
  • 1 cucumber, chopped
  • 1/4 cup green onions, chopped
  • 1 sweet potato
  • 1/2 avocado

1 Preheat the broiler on high. Squeeze half the lemon juice over the salmon and sprinkle with salt and pepper. Cook the salmon under the broiler for 6-8 minutes or until flaky and cooked through.

2 Meanwhile combine the remaining lemon juice, olive oil, balsamic vinegar, honey, and mustard. Massage into the kale for 1-2 minutes until kale begins to soften.

3 Pierce the sweet potato a few times with a fork or knife. Microwave for 4-5 minutes until tender. You can also bake it in the oven. Carefully chop.

4 Toss everything together. Season with salt and pepper.
