List of Ingredients:

  • 1.5 lbs cremini mushrooms, halved (or baby bella)
  • 1 tbsp unsalted butter, melted
  • 2 tsp olive oil
  • 2 tbsp balsamic vinegar
  • 1.5 tbsp low sodium soy sauce
  • 1 tsp garlic powder (or 2 cloves minced fresh garlic)
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

1 Preheat the oven to 425 degrees. Toss together the mushrooms, butter, olive oil, vinegar, soy sauce, garlic, thyme, salt, and pepper in a large bowl. Make sure everything is well coated.

2 Spray a baking sheet with cooking spray. Arrange mushrooms in a single layer.

3 Roasted for 14-18 minutes until the mushrooms are tender and beginning to brown on the edges. Serve with fresh herbs if desired.
