Roasted Grape Tomatoes

Roasted grape tomatoes take less than 30 minutes to make and have the most delicious, intense tomato flavor. Tossed with garlic and herbs, these roasted grape tomatoes are a great side dish, tossed with pasta, or served on toasted bread.

What you need:

  • 4 cups grape tomatoes, halved
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning
  • Salt and pepper

Step 1 Preheat the oven to 450 degrees. Wash and dry the tomatoes, removing any stems. Cut the tomatoes in half.

Step 2 Toss the tomatoes with the olive oil, minced garlic, Italian seasoning, kosher salt, and pepper. If desired add fresh rosemary, thyme, or other herbs.

Step 3 Lay flat on a baking sheet. Roast for 20-25 minutes are tomatoes are beginning to burst.

Step 4 Let cool slightly before serving. Season if needed.
