Roasted Fingerling Potatoes Recipe
Make the most delicious crispy fingerling potatoes in just 30 minutes! Different seasoning options and tips for making perfect potatoes every time.
List of Ingredients:
- 2 lbs fingerling potatoes, washed and halved
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1/2 tsp freshly cracked black pepper
Preheat the oven to 400 degrees. Prepare the potatoes: Wash the potatoes and dry them well. Cut the potations in half lengthwise, leaving the skin intact. If there are any very large fingerling potatoes, cut them in fourths.
Toss the potatoes with olive oil, salt, garlic powder, and black pepper. See notes below for additional seasoning options.
Place cut side down on a baking sheet, making sure there is some space between the potatoes. They shouldn’t be crowded on the pan.
Roast for 30 minutes until a nice, brown crispy edge has formed on the cut side of the potato. Carefully flip the potatoes over and cook for 5-10 minutes until tender. Taste and season as needed.
