Pumpkin Chocolate Chip Oatmeal Muffins

What you need:

  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1/2 cup unsweetened almond milk (or skim)
  • 2 tbsp. maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 1 cup rolled oats
  • 1/4 cup chocolate chips
  • 1 tsp. baking powder

Step 1 Preheat the oven to 375 degrees. In a large bowl, whisk together the eggs, pumpkin, milk, maple syrup, vanilla extract, pumpkin pie spice, and salt.

Step 2 Once combined, add the oats, chocolate chips. and baking powder. Stir until combined.
