Potato Green Chile Tacos

What you need:

  • 2 tbsp olive oil
  • 1 lb potatoes, diced (about ½ inch chunks)
  • 1 onion, sliced
  • 2 tbsp water
  • 3 poblano peppers, sliced (or 1 cup drained canned green chile)
  • 2 garlic cloves, minced
  • 1 tsp Mexican oregano (or regular)
  • 1/2 tsp cumin
  • Salt and pepper
  • 8 corn tortillas

Step 1 Heat the oil in a large nonstick skillet over medium heat. Once hot add the potatoes and onions. Season with salt and pepper. Stir so that they are coated with oil. Add the water to the pan and cover. Cook for 10 minutes, shaking the pan or stirring as needed so that the potatoes brown but don’t burn.

Step 2 Open and add the poblano peppers, garlic, oregano, cumin, salt, and pepper. Cook, stirring as needed, for 6-8 minutes until the potatoes are cooked through and the peppers are tender-crisp. Note: For a more traditional “taco de papa,” gently mash the potatoes before serving adding them to the tortillas.
