What you need:

  • 1.5 pounds tomatoes, diced
  • 1 tsp kosher salt
  • 3/4 cup onion, diced
  • 2 jalapenos, diced (seeded and deveined for less heat)
  • 2 tbsp lime juice
  • 1/2 cup cilantro, chopped
  • Salt and pepper to taste

Step 1 Place the tomatoes in a fine-mesh strainer and toss with salt. Let sit over a bowl or in the sink for 20 minutes. This prevents soggy tomatoes.

Step 2 While the tomatoes sit, combine the onion, jalapeno, and lime juice. Let rest while the tomatoes finish.
