List of Ingredients:

  • 1 red onion, sliced thin
  • 4 limes, juiced (more if needed)
  • 1 tbsp white vinegar
  • 1 tsp kosher salt (or sea salt)
  • 1 tsp black peppercorns

1 Mexican style: Slice the onions very thin using a sharp knife or mandolin. Add the onions to a glass jar or bowl. Cover with lime juice, white vinegar, salt, and peppercorns. Add more lime juice if the onions aren't mostly submerged. Shake or stir, pressing the onions down into the lime juice. Let sit for at least 30 minutes, ideally 60 minutes.

2 Traditional pickled onions: In a small pot, bring 3/4 cup vinegar, 1/4 cup water, 1 tsp kosher salt, and 1-2 tablespoon sweetener to a simmer. While the mixture simmers, slice one onion into thin slices. Combine the red onions and simmering pickling liquid. Shake or stir, making sure to press the onions down so they are fully submerged. Let sit for at least 30 minutes, ideally 60 minutes.
