What you need:

  • 4 zucchini, cut into eighths
  • 2 egg whites
  • 1/4 cup Parmesan
  • 1/4 cup Panko breadcrumbs
  • 1 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • Salt and pepper
  • Cooking spray

Step 1 Preheat the oven to 425 degrees. Whisk the egg whites until frothy.

Step 2 Mix the Parmesan, breadcrumbs, Italian seasoning, garlic powder, red pepper flakes, salt, and pepper.
