Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, sliced
  • 2 tbsp taco seasoning
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1/2 onion, sliced
  • 14 oz. canned diced fire roasted tomatoes
  • 14 oz. canned black beans
  • 1 cup white rice (or brown quick-cooking rice)
  • 1.5 cups low sodium chicken broth

Step 1 If you are making homemade taco seasoning (see notes), mix together the chili powder, cumin, garlic powder, oregano, paprika, black pepper, and salt to create the spice mixture.

Step 2 Heat the olive oil over medium high heat. Add the chicken and half the spice mixture. Cook until lightly browned on the outside, 3-5 minutes. Remove and set aside.

Step 3 Add the peppers and onions to the pan. Cook for 4-5 minutes until beginning to soften.

Step 4 Add the diced tomatoes, black beans, rice, chicken broth, and remaining spice mixture. Stir together and bring to a boil.

Step 5 Add the chicken to the pan and turn the heat down to a simmer. Cover and cook for 20-25 minutes or until the rice is cooked through. The cooking time may vary based on the rice you choose. Use the directions for the rice for a rough estimate of how much time it will take.

Step 6 Open and season with salt and pepper as needed. Top with cheese, cilantro, salsa, avocado, sour cream, fresh lime juice, and anything else that you would throw onto a taco
