Step 1
Heat a large skillet over medium high heat. Add the ground beef and taco seasoning. Cook, breaking up the meat as it cooks, until it is fully cooked through.

Preheat the oven to 425 degrees. Spread the tortillas out on a baking sheet, you may need two baking sheets to fit all the tortillas. Spray them with cooking spray or brush with olive oil. Bake for 2 minutes per side until lightly crispy.
Step 3
Remove from the oven. Carefully add a layer of refried beans to four of the tortillas (about ¼ cup per tortilla). Add a thin layer of ground beef and drizzle with about 1 tbsp of red enchilada sauce. Place another tortilla on top. Add another thin layer of enchilada sauce. Top with another sprinkle of cooked ground beef and about ¼ cup of cheese.
