Light Italian Dressing

What you need:

  • 1/3 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 1 garlic clove, grated
  • 1 tbsp Dijon mustard
  • 2 tsp honey (or pure maple syrup)
  • 1 tbsp Italian seasoning
  • 1 tsp kosher salt
  • 1/4 tsp black pepper

Step 1 In a small bowl, whisk together all of the ingredients. You can also add them to a mason jar and shake vigorously. The dressing should emulsify.

Step 2 Taste and season with salt and pepper as needed. If the dressing is too tart, add more olive oil or a touch more honey.
