This 30 minute hearty lentil soup is packed with perfectly tender lentils, sweet potatoes, and kale. It's easy to make and can be customized with added protein, veggies, and more.

Heat the olive oil in a large soup pot of Dutch oven. Add the onion, carrots, and celery. Cook for 6-8 minutes until beginning to soften. Season with salt and pepper.

Add the sweet potatoes, garlic, thyme, and rosemary. Stir and cook for 3-4 minutes. Add the vegetable broth. Turn the heat to medium high and bring to a simmer. Add the lentils. Turn the heat down so it continues simmering. Cook for 15 minutes.

Add the kale. Stir and cover. Cook for 5-10 minutes until lentils and potatoes are tender. Season well with salt and pepper. Serve with lots of fresh lemon juice.
