Lentil Soup (Quick and Easy)

This easy Lentil Soup is satisfying, delicious, and chock-full of fall vegetables. In just 30 minutes, you will have a big bowl of heart-healthy soup that the whole family will love.

What you need:

  • 2 tbsp olive oil
  • 1/2 onion, diced
  • 4 carrots, chopped
  • 4 ribs celery, chopped
  • 2 cups sweet potatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups vegetable broth
  • 1 cup uncooked lentils (rinsed and drained)
  • 2 cups Lacinato kale, chopped
  • Salt and pepper

Step 1 Heat the olive oil in a large soup pot of Dutch oven. Add the onion, carrots, and celery. Cook for 6-8 minutes until beginning to soften. Season with salt and pepper.

Step 2 Add the sweet potatoes, garlic, thyme, and rosemary. Stir and cook for 3-4 minutes. Add the vegetable broth. Turn the heat to medium high and bring to a simmer. Add the lentils. Turn the heat down so it continues simmering. Cook for 15 minutes.

Step 3 Add the kale. Stir and cover. Cook for 5-10 minutes until lentils and potatoes are tender. Season well with salt and pepper. Serve with lots of fresh lemon juice.
