What you need:

  • 8 large eggs
  • 1/3 cup skim milk
  • 3/4 cup cheddar cheese, shredded
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tbsp olive oil
  • 4 cups kale, stemmed and chopped
  • 1/4 onion, sliced very thin
  • 2 tbsp Parmesan cheese

Step 1 Preheat the oven to 350 degrees. In a large bowl, whisk the eggs until well combined. Whisk in the milk, cheddar cheese, salt, and pepper. Set aside.
