What you need:

  • 3 tbsp butter
  • 3 tbsp flour
  • 1/4 cup onion, minced (optional)
  • 1 garlic clove, minced
  • 1.5 cups chicken broth (or turkey broth, the better flavor, the better the gravy)
  • Salt and pepper to taste

Step 1 In a medium size saucepan, melt the butter over medium heat. Add the onion and a pinch of kosher salt and pepper. Cook for 4-5 minutes until soft and tender. If using garlic, stir it in and cook for 1 minute until fragrant.

Step 2 Whisk in the flour until it is completely smooth without any lumps.
