A lightened up version of the classic diner Tuna Melt! Made with a lightened up tuna salad, sliced tomatoes, and plenty of melted cheese on wheat bread.

List of Ingredients:

  • 4 slices wheat bread (any bread will work)
  • 1 tomato, sliced
  • 1 cup reduced fat shredded cheddar cheese (or any cheese)
  • 10 oz canned tuna
  • 1/4 cup celery, chopped
  • 2 tbsp nonfat Greek yogurt
  • 1 tbsp reduced fat mayonnaise
  • 1 tsp lemon juice
  • 1/4 tsp celery seed
  • Salt and pepper

1 Make the tuna salad by combing the tuna, celery, Greek yogurt, mayonnaise, lemon juice, celery seed, salt, and pepper. If possible let it sit for 30 minutes in the fridge.

2 Toast the bread in the toaster oven or under the broiler.

3 Layer the tomatoes slices on to the bread. Season with salt and pepper. Add the tuna salad and then top with cheese.

4 Place under the broiler or in a toaster oven until the cheese melts and bubbles. Serve immediately.
