What you need:

  • 1 pound 99% lean ground turkey
  • 1/2 onion, diced
  • 1 poblano pepper, chopped
  • 2 cloves garlic, minced
  • 15 oz. canned pinto beans, drained and rinsed
  • 1 cup canned corn (drained)
  • 1 tbsp tomato paste
  • 1 oz taco seasoning
  • 15 oz salsa (thick and chunky salsa)
  • 1 cup reduced fat shredded cheddar cheese
  • 1/4 cup cilantro, chopped

Step 1 Preheat the oven to 425 degrees. Spray an oven safe skillet with cooking spray. Add the ground turkey and cook for 3-4 minutes.

Step 2 Add the onion, pepper, and garlic. Cook for 3-4 minutes until the turkey is no longer pink and onion is translucent.

Step 3 Stir in the canned pinto beans, corn, tomato paste, and taco seasoning. Cook for 2 minutes.

Step 4 Stir in the salsa. Taste and season with salt and pepper if needed.

Step 5 Top with cheese. Bake until the cheese is melted and the casserole is heated through about 10 minutes. You can also just cover the skillet until the cheese melts. Let sit for 5 minutes. Add all your favorite taco toppings.
