Healthy Balsamic Vinaigrette
A lightened up version of classic Balsamic Vinaigrette that tastes amazing on salads, as a marinade, drizzled over veggies, and more.
What you need:
- 1/3 cup low sodium chicken broth (or vegetable)
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 2 teaspoons Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup extra virgin olive oil
Whisk together broth, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper until well combined.
Slowly pour in olive oil, whisking continuously until dressing is completely emulsified
Taste and season with salt and pepper. Pour into jar, seal and store in refrigerator. Serve over salad, grilled vegetables or meat . Shake well before serving
