What you need:

  • 1 tbsp olive oil
  • 1 red onion, sliced thin
  • 3 bell peppers, sliced thin (red, yellow, green)
  • 1 lb 95% lean ground beef
  • 3 tbsp fajita seasoning (divided)
  • 1/4 cup cilantro
  • 1 lime (wedges for serving)
  • 8 small flour tortillas

Step 1 Heat the olive oil over medium high heat. Add the onions and peppers. Cook for 6-8 minutes until tender-crisp. If they begin to burn, add a splash of water to the pan. Remove the peppers and onions and set aside.

Step 2 Add the ground beef and fajita seasoning to the pan. Cook for 6-8 minutes, breaking it up as needed until it is browned and fully cooked. Taste and season if needed.

Step 3 Add the peppers and onions back to the pan along with the cilantro. Stir to combine.

Step 4 Serve the ground beef and fajita veggies in warmed flour tortillas. Add any toppings you like.
