What you need:

  • 1 seedless watermelon, sliced into 1-1.5 inch thick triangles
  • 2 tbsp olive oil (more if needed)
  • 2 limes, juice (add zest for more lime flavor)
  • Salt to taste (ideally flaky salt or kosher)

Step 1 Preheat the grill to medium high heat. Brush the watermelon on both sides with olive oil, coconut oil, or avocado oil.

Step 2 Cook for about 3 minutes per side until grill marks form and there is some light char. Be careful not to overcook it, or it may get mushy.

Step 3 Remove from grill and squeeze fresh lime juice over top. Sprinkle with salt. For different flavor ideas, you can drizzle with honey or balsamic vinegar, top with fresh herbs like cilantro, basil, or mint, or add Mexican chili lime seasoning.
