List of Ingredients:
1 lb shrimp, peeled and deveined
1 lime, juice
1 tbsp olive oil
2 tsp chili powder
1 tsp cumin
1 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/8 tsp cayenne pepper (optional)
2 cups shredded cabbage (red, green, or both)
1 cup pineapple, diced (or mango)
1/4 cup cilantro, chopped
1/4 cup red onion, diced
2 tbsp lime juice
1 tbsp olive oil
Salt and pepper
8 corn tortillas

Add the shrimp to a large bowl with the lime juice, olive oil, chili powder, cumin, salt, garlic powder, onion powder, and cayenne peppers. Toss and set aside.

Make the pineapple slaw. Combine the cabbage, pineapple, cilantro, red onion, lime juice, olive, salt, and pepper to taste. Set aside.

Preheat the grill to medium high heat. Cook the shrimp (skewered for easier flipping) for 1.5-2 minutes per side until cooked through.

Grill the corn tortillas for about 20 seconds per side until warmed through and lightly charred.
