Grilled Potatoes

Grilled Potatoes cooked in foil packets with onions, mushrooms, butter, and herbs are tender, smoky, and some of the best potatoes you'll ever try.

What you need:

  • 2 Russet potatoes, sliced into rounds (or other)
  • 1 onion, sliced thin
  • 1 cup sliced mushrooms
  • 2 tbsp butter (or ghee or olive oil)
  • 1.5 tsp Italian seasoning
  • 1/2 tsp seasoned salt
  • 1/2 tsp black pepper

Step 1 Heat grill to medium-high heat. Lay 4 pieces of heavy duty aluminum foil on tray or cutting board. Wash and cut potatoes into slices, about 1/4 inch thick. Add onions and mushrooms (if desired) on top of potatoes Cut butter into pieces and add 1/2 tbsp of butter to each packet.

Step 2 Cut butter into pieces and add 1/2 tbsp of butter to each packet. Combine the Italian seasoning, seasoning salt, and pepper. Sprinkle over the potatoes.

Step 3 Close the packets, sealing them fully. Place on the grill and cook for 20-30 minutes until cooked through. Turn the packets and give them a few shakes during cooking.

Step 4 Carefully open the grilled potato packets. Taste and season if needed.
