Grilled Potatoes cooked in foil packets with onions, mushrooms, butter, and herbs are tender, smoky, and some of the best potatoes you'll ever try.
What you need:
- 2 Russet potatoes, sliced into rounds (or other)
- 1 onion, sliced thin
- 1 cup sliced mushrooms
- 2 tbsp butter (or ghee or olive oil)
- 1.5 tsp Italian seasoning
- 1/2 tsp seasoned salt
- 1/2 tsp black pepper
Heat grill to medium-high heat. Lay 4 pieces of heavy duty aluminum foil on tray or cutting board. Wash and cut potatoes into slices, about 1/4 inch thick. Add onions and mushrooms (if desired) on top of potatoes Cut butter into pieces and add 1/2 tbsp of butter to each packet.
Cut butter into pieces and add 1/2 tbsp of butter to each packet. Combine the Italian seasoning, seasoning salt, and pepper. Sprinkle over the potatoes.
Close the packets, sealing them fully. Place on the grill and cook for 20-30 minutes until cooked through. Turn the packets and give them a few shakes during cooking.
Carefully open the grilled potato packets. Taste and season if needed.
