What you need:

  • 24 oz boneless skinless chicken breasts (4 6-oz filets)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 4 slices mozzarella cheese
  • 1 cup cherry tomatoes, quartered
  • 1 tbsp balsamic vinegar
  • 4 tbsp pesto
  • Salt and pepper to taste

Step 1 Start by gently placing the chicken between two pieces of saran wrap and pound the chicken filets to be a uniform thickness, about ¾ inch thick.

Step 2 Brush the chicken with olive oil. Sprinkle with Italian seasoning, garlic powder, salt, and pepper.
