Grilled Chicken Margherita Recipe
In just 20 minutes, make this delicious grilled chicken covered with melted mozzarella cheese, pesto, and tomatoes! Healthy, easy, and deliciious.
List of Ingredients:
- 24 oz boneless skinless chicken breasts (4 6-oz filets)
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 4 slices mozzarella cheese
- 1 cup cherry tomatoes, quartered
- 1 tbsp balsamic vinegar
- 4 tbsp pesto
- Salt and pepper to taste
Start by gently placing the chicken between two pieces of saran wrap and pound the chicken filets to be a uniform thickness, about ¾ inch thick.
Brush the chicken with olive oil. Sprinkle with Italian seasoning, garlic powder, salt, and pepper.
Grill the chicken for 3-4 minutes per side or until just cooked through.
Place 1 slice of mozzarella cheese on each piece of chicken. Close the grill for 30-60 seconds until the cheese melts.
Toss the cherry tomatoes and the balsamic vinegar, salt, and pepper.
Top the chicken breast with pesto and cherry tomatoes.
