Grilled Flank Steak with Balsamic Marinade

What you need:
- 1.33 lbs. lean flank steak
- 3 tbsp. balsamic vinegar
- 1 tbsp. olive oil
- 1 garlic clove, minced
- 1 tsp. dried thyme (or more fresh)
- 3/4 tsp kosher salt
- 1/2 tsp freshly ground black pepper

Step 1
Whisk together the balsamic vinegar, olive oil, garlic, and thyme. Alternatively, add those ingredients to a blender. Blend until smooth. Pour the balsamic marinade over the steak and allow to marinate for at least 30 minutes, ideally overnight in the fridge. The longer you marinate the steak, the more flavor it will be and it will also be more tender.

Step 2
Season with steak well with salt and pepper. Grill for 6-8 minutes per side for medium or test with an instant read thermometer and cook until 135-145°F. Let the steak rest for at least 5 minutes and thinly slice to serve.

To broil: Preheat the broiler and cook the steak for 6 minutes on the first side then flip and cook another 2-3 minutes for medium doneness or until an instant read thermometer reads 135-145°F.
