Grilled artichokes are awesome for summer BBQs or dinner parties. They are sweet, smoky, and tender—even better when served with delicious garlic herb butter!

Start by trimming about ½ inch off the bottom of the artichoke stem. Remove any small leaves and use a vegetable peeler to remove the thick outer layer of the stem. Rub with lemon to prevent browning.

Cut off the top ½ inch or so of the artichoke. Rub with some lemon. Then use scissors to cut away the pointy tips of the artichoke leaves. Rub with lemon if desired to prevent browning. Cut the artichokes in half. Use a metal spoon to remove the fuzzy inner chokes and small tough leaves. Rub with lemon juice.

Add about 1-1.5 inches of water to a large pot. Add the garlic, bay leaf, and remaining lemon juice to the water. Place a steamer basket (if you have it) in the pot. Add the artichokes. Bring the water to a boil. Cover and steam for about 25-35 minutes or until the artichokes are tender and you can easily pierce the heart with a knife and the leaves can be easily removed. Carefully remove the artichokes from the steamer basket.

Preheat the grill to medium-high heat. Brush the artichokes with olive oil and season well with salt and pepper. Place the artichokes, cut side down, on the grill and cook for 6-10 minutes until dark brown grill marks form.a

Serve with garlic herb butter, aioli, or any other sauce. Our favorite option is simple garlic butter. Microwave butter with freshly minced garlic and your favorite herbs.
