Greek Ground Turkey

What you need:

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 cup onion, diced
  • 1.33 lbs 99% lean ground turkey
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper
  • 6 cups baby spinach
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup kalamata olives, halved
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup reduced fat feta cheese
  • 1 lemon
  • 1 cup cherry tomatoes, chopped
  • 1 cup cucumbers, chopped

Step 1 Heat the olive oil over medium high heat in a skillet. Add the onion and cook for 4-5 minutes. Add the garlic and cook for one minute until fragrant. Add the ground turkey and cook until browned, breaking it up as it cooks.

Step 2 Add the oregano, basil, salt, and pepper. Stir and cook for 1 minute. Add the spinach, sundried tomatoes, and olives. Cook for 2-3 minutes until spinach wilts.

Step 3 Serve with lots of fresh lemon juice, parsley, feta cheese, cherry tomatoes, and cucumber.
