What you need:
- 2 medium eggplant, cubed (1 inch)
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper
- 1 tbsp balsamic vinegar (or glaze)
Preheat the oven to 450 degrees. Cover a baking sheet with parchment paper. Toss the eggplant with the olive oil, garlic powder, salt, and pepper.
Lay flat on the baking sheet in a single layer.
Roast for 30 minutes, flipping after 20 minutes. Drizzle with the balsamic vinegar before serving.
