Ensalada de Pollo is Mexico’s classic chicken salad—creamy, refreshing, and protein-packed! Make it in less than 15 minutes with shredded chicken, peas, carrots, corn, and a delicious zesty dressing. Enjoy it on tostadas, sandwiches, wraps, or a green salad!

What you need:

  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas, carrots, and corn (defrosted, this can also include green beans)
  • 3 tbsp Mexican crema (or light sour cream)
  • 3 tbsp light mayonnaise (or Greek yogurt)
  • 1 tbsp lime juice (more to taste)
  • 1 tbsp jalapeno brine (plus cup to ¼ cup diced pickled jalapenos if you like it spicy)
  • Salt and pepper

Step 1 In the bottom of a large bowl, combine the Mexican crema, mayonnaise, lime juice, jalapeno brine, salt, and pepper. Stir well.

Step 2 Add the chicken, vegetables, and diced jalapenos if using. Stir well to combine. Taste and season with salt and pepper if needed.
