Easy Spring Mix Salad

- 10 oz spring mix
- 2 Persian cucumbers, sliced
- 1.5 cups cherry tomatoes, halved
- 1/2 cup shredded carrots
- 1/4 red onion, thinly sliced
- 1/3 cup plain nonfat Greek yogurt
- 3 tbsp balsamic vinegar
- 1.5 tbsp olive oil
- 2 tsp Dijon mustard
- 2 tsp honey (more to taste)
- Salt and pepper
Make the dressing by whisking together the yogurt, balsamic vinegar, olive oil, mustard, and honey.
Toss together the spring mix, cucumbers, tomatoes, carrots, and red onion. Drizzle with dressing.
Optional croutons: Preheat the oven (or toaster oven) to 400 degrees. Chop 2 pieces of sourdough bread (or other) into pieces and spray with cooking spray (or toss with olive oil.) Sprinkle with salt, pepper, and any spices you like. Bake for 8-10 minutes until crispy. Remove and set aside.
