What you need:

  • 24 oz. cod (or other white fish, but into 8 pieces)
  • 2 eggs, whisked
  • 1/4 cup all purpose flour
  • 3/4 cup seasoned breadcrumbs
  • 1 tsp Old Bay seasoning
  • 1 Salt and freshly ground pepper

Step 1 Preheat the oven to 400 degrees. Season fish with salt and pepper. Mix the breadcrumbs and Old Bay and place in a shallow dish.

Step 2 Dip the fish in flour on both sides, then in the eggs, and then in the breadcrumbs. Repeat with all the fish pieces. Place on baking sheet sprayed with cooking spray. Spray additional cooking spray on top of the fish.

Step 3 Place on baking sheet sprayed with cooking spray. Spray additional cooking spray on top of the fish. Bake for about 16-20 minutes until the fish is flaky.
