Cranberry Jalapeño Relish

What you need:

  • 12 oz fresh cranberries
  • 1/3 cup cilantro
  • 1/4 cup green onions
  • 2 jalapenos (seeded and devined for less heat, use half for less spicy)
  • 1/3 cup brown sugar
  • 1 lime, juice
  • 1 tsp fresh ginger, minced
  • 1/4 tsp cumin (optional)
  • 1/4 tsp kosher salt

Step 1 Add the cranberries, cilantro, green onions, and jalapenos to a food processor.  Pulse a few times until a chunky mixture forms. It should be finely chopped, but have lots of texture still.

Step 2 Remove the from the food processor and stir in the brown sugar, lime juice, ginger, and salt. Cover and refrigerate for at least 2 hours for the flavors to meld.
