Cottage Cheese Queso

What you need:

  • 16 oz reduced fat cottage cheese
  • 2 tbsp taco seasoning
  • 1 cup reduced fat shredded cheddar cheese (or full fat, or pepper jack cheese OR 1/2 cup nutritional yeast)
  • 1 cup canned Rotel tomatoes, drained (or canned diced tomatoes with green chilies, drained)

Step 1 Add the cottage cheese and taco seasoning to a food processor or blender. Blend until smooth and creamy.

Step 2 Add the cottage cheese to a microwave safe bowl or small pan. Stir in the shredded cheese and Rotel tomatoes. Microwave for 1.5 - 3 minutes, stirring every 30 seconds, until the cheese is melted. Stir vigorously until everything is well combined. If using a saucepan, heat over medium low heat, stirring often, until the cheese is melted.

Step 3 Add any toppings you like including fresh cilantro, jalapenos, salsa, hot sauce, or pickled onions. Serve warm with tortilla chips, crackers, or veggies.
