This creamy coconut cauliflower rice is the ultimate healthy side dish. Made simply with cauliflower, coconut milk, garlic, and ginger, this flavorful dish is easy to make and beyond delicious.
Step 1
Heat the coconut oil over medium heat in a skillet. Add the garlic and ginger and cook for one minute until fragrant. Add the cauliflower rice and cook for 3-4 minutes.
Step 2
Add the coconut milk and cook for 5-7 minutes until it is mostly absorbed and the cauliflower rice is tender. If you want sweeter rice, add a bit of coconut sugar or Stevia to the coconut milk before adding.
Step 3
Turn off the heat and add the cilantro if using. Season well with salt and pepper. This is delicious with some fresh squeeze lime juice as well.
