  • 20 oz. canned chickpeas, rinsed and drained
  • 1 orange bell pepper, chopped (or yellow)
  • 1 green bell pepper, chopped
  • 1/2 cup red onion, chopped
  • 1.5 cups cherry tomatoes, halved
  • 2 Persian cucumbers, chopped
  • 1/4 cup parsley, chopped
  • 4 oz reduced fat feta cheese
  • 1/2 cup kalamata olives, chopped
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 tbsp. red wine vinegar
  • 1 cloves garlic, minced
  • 1 tsp oregano
  • Salt and pepper
