Chocolate Baked Oatmeal Recipe
This decadent chocolate baked oatmeal tastes like dessert but is healthy enough to have for breakfast! Wholesome, great for meal prep, and easy to customize.
List of Ingredients:
- 2 cups unsweetened almond milk
- 1 ripe banana, mashed
- 1 egg
- 1/4 cup unsweetened cocoa powder
- 1/4 cup pure maple syrup
- 2 tbsp peanut butter (or almond butter)
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 2 tbsp chia seeds
- 1/4 cup chocolate chips
- 1 teaspoon baking powder
- 1/4 tsp kosher salt
Preheat the oven to 375 degrees. Spray an 8 X 8 pan with cooking spray or cover with parchment paper. Mash the bananas in a large bowl.
Add the milk, egg, cocoa powder, maple syrup, peanut butter, and vanilla extract. Stir to combine.
Add the oats, chia seeds, chocolate chips, baking powder, and salt. Stir to combine.
Pour into the baking dish. Bake for 35-40 minutes until golden brown.
