Chicken Kofta Bowls

These Chicken Kofta Bowls are made with ground chicken cooked in Middle Eastern spices and garlic for a flavor-packed bowl that's served with brown rice and vegetables. It's easier to make than traditional kofta and still has all the same great flavor.

What you need:
- 2 tsp olive oil
- 1.33 lbs. 99% lean ground chicken
- 1/4 cup parsley, minced
- 2 garlic cloves, minced
- 2 tsp. cumin
- 1/2 tsp coriander
- 1/2 tsp dried mint (spearmint not peppermint)
- 1/4 tsp red pepper flakes
- 1/4 tsp cinnamon
- 1/4 tsp allspice
- 2 cups cooked brown rice
- 1 cup cucumbers, chopped
- 1 cup tomatoes, chopped
- 1/2 cup hummus
- 1/4 cup reduced fat feta cheese

Step 1
Heat the olive oil over medium-high heat. Add the ground chicken and break it up using a wooden spoon.

Add the parsley, garlic, cumin, coriander, mint, red pepper flakes, allspice, cinnamon, salt, and pepper. Stir together and cook until chicken is cooked through and no longer pink, about 5-6 minutes.

Assemble the bowls. Start with the brown rice. Add the cooked chicken kofta meat, cucumbers, tomatoes, hummus, and feta cheese.
